I’m such a lover of stir fries – they are so quick, easy, versatile and super healthy. At the end of a long day for everyone, you can easily get this from fridge to table in 15 minutes. When my children were toddlers, I unashamedly bought into the convenience of ready sliced meat, veggies and pre-cooked rice and noodles (and still occasionally do!) which made preparation even quicker.
Stir fries often come about when I have bits of veggies left in the fridge, the ones I’ve used here can be substituted for anything you like, as can the meat.
I will be honest here – this isn’t my kids favourite meal, and they tuck in with less enthusiasm than then do with other dinners, no matter what variation of meat, veggies and sauces I use. We have a version of a stir fry probably once every couple of weeks, because I really enjoy it and we all get a turn in choosing what we eat. I do hope that someday they may develop more of a love for it if I keep feeding them it enough! (watch this space..)

Pork Noodles with Honey & Soy
Serves 4
Ingredients
- 500g sliced pork loin
- 1 medium red pepper
- 200g button mushrooms
- 160g (or 1 pack) baby corn
- 3-4 large broccoli florets (around 100-150g)
- 2 cloves garlic, crushed
- 2 tsp Chinese 5 spice
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp sesame seeds, plus a few extra for sprinkling
- 200g dried noodles (I use whole-wheat), or you could also use pre-cooked
Method
- Bring a medium pan of salted water to the boil, add the noodles and cook according to the instructions given on the pack
- Prepare your vegetables by slicing into thin strips, then set aside
- In a large frying pan or wok, heat the sesame oil over a high heat, then add the garlic and sliced pork loin
- Sprinkle over the 5 spice powder and stir fry for 2-3 minutes, or until the meat is no longer pink
- Add the sliced vegetables and continue stir frying for an additional 3-4 minutes, until the meat is cooked through and the vegetables are fried but still crunchy
- Remove from the heat and add the soy sauce, honey, sesame seeds and cooked noodles. Toss everything together well
- Return to the heat until continue stirring for another minute, until everything is heated through
- Finish with an extra sprinkle of sesame seeds before serving
